Anzer Tea , which is one of the hundreds of flowering plants that give taste and smell to the world-famous Anzer honey , is a type of thyme. This plant, which is distributed in high parts of the Eastern Black Sea Region, grows naturally in the region of Ikizdere district of Rize province, called Anzer up and down, at an altitude of 2300-2900 m.
Anzer Stream , which is found in flowering at different heights for approximately two months since June , is one of the most visited nectar plants by bees.
Anzer Stream, which has been known by the local people for hundreds of years and collected from nature, is dried and consumed in the form of herbal tea in winter.
Anzer Tea Benefits?
The harvesting time of Anzer tea has an effect on the volatile oil ratio and the highest volatile oil rate is reached during the full flowering period. In addition, harvests in early morning or in the evening in foggy and hazy weather also reduce quality. The drying of the harvested plants affects the quality and storage time of the tea. High quality dry product is obtained from the plant which is harvested in full flowering period and dried in clean shade places without waiting too long.
The preparation of Anzer tea requires special care and incorrect brewing methods impair the quality of the tea. Boiling and brewing of Anzer tea causes the volatile oil to fly with the steam and the bitter substances in the plant pass into the tea. To ensure the best taste and benefit, a pinch of Anzer tea should be poured into boiled hot water, the lid of the coffee pot should be closed and left to infuse for 5-10 minutes. Anzer tea, golden yellow in color, should be drunk warm and the flowers used in brewing should not be used again.
Although not known in the region, the essential oil and water of this oregano species called Anzer tea can be obtained. In our country, thyme oil and thyme juice are still being produced in modern facilities. However, since ancient times, thyme oil and water have been obtained by traditional methods in many villages of Anatolia.
These products which are obtained by distillation by boiling with water in large pots on fire are used for various purposes.

However, it should be taken into consideration that, the collection of plants grown in the natural flora for commercial purposes in the region will endanger the generation of plants, the plant must be cultivated. Anzer tea is a perennial plant and it is possible to produce with plant cuttings and root parts.
The fact that it is located in the region intensely shows that it can be cultivated. In production to be made with plant cuttings to be planted in spring or autumn, the yield in the first year will be low.
However, yield will increase gradually in later years. After the first year of a decare area, an average of 150-200 kg of dry Anzer tea will be available.
